Our ideal candidate has honed their skills in a restaurant with a large international wine selection. While prior experience with such restaurants is preferred, it is not mandatory. Consideration will also be given to candidates with a background and interest in wine and who would like to improve their expertise in wine.

Our desired sommelier is not only passionate about the service sector but also willing to serve food and cocktails him or herself. We are looking for a team member who possesses an innovative spirit, constantly seeking creative ways to enhance our operations. We invite candidates who bring fresh ideas to the table, striving for continuous improvement in both our wine program as well as service, and restaurant procedures.Candidates must excel under pressure, demonstrate efficiency and uphold meticulous standards of hygiene and cleanliness, adhering to international and Western hygiene protocols.Our owner is a distinguished level 4 WSET diploma holder and certified sommelier with the Court of Master Sommeliers. Sommeliers will work closely along aside the owner who is based overseas in creating strategies on how to improve revenue, improve the ever-evolving wine list, constantly manage our inventory, order wines and liquor and directly communicate with suppliers.Furthermore, adept budget analysis and meticulous cost planning will be integral to the sommelier's responsibilities, making it crucial for them to possess a genuine affinity for numbers and enjoy working with financial data.Last but not least, another very important aspect of our sommelier's job is to train our team with weekly training sessions. Effective communication skills are crucial, as the role requires exceptional leadership, the ability to inspire and motivate the team, and occasional authoritative decision-making.Fluency in English is an essential requirement for all applicants, without exception. While we also encourage junior sommeliers or waiters who are ready to take on the challenge of becoming a sommelier, we expect every candidate to have a solid foundation in wine knowledge and a deep motivation to expand their understanding, ultimately honing the skills of a sommelier.As a small team that operates like a close-knit family, we foster an inclusive and nurturing working environment, valuing the contributions of all staff members.

We currently have an opportunity for a Sous Chef to join our team and must be prepared to work as part of a very busy team on the island of Nusa Lembongan which is 30 minutes by fast boat from Sanur on Bali

Role Responsibility:

Maintain standard of food quality and production. Train, motivate and supervise kitchen brigade. Control food costs and coordinate the food service operation in line with demand. In achieving the above the Sous Chef liaises very closely with Head Chef.

The Sous Chef will be required to conduct their duties in a courteous, safe and efficient manner, in accordance with the restaurant’s policies and procedures, ensuring that a high level of service is maintained.

Assist with the preparation and planning of meal designs.

Provide support to junior kitchen employees with various tasks including line cooking, food preparation, and dish plating.

Create schedules for kitchen employees and evaluate their performance.

Adhere to and implement sanitation regulations and safety regulations.

Manage the kitchen team in the Head Chef's absence.

Ensure efficient, cost-effective operation and profitability of food production.

Supervise and inspect all preparation and cooking equipment on a regular basis to ensure that they are kept clean, sanitary, and in perfect operating order.

Ensure that food products, presentation, and plating are of the highest quality, and are prepared to serve in a timely manner.

And any other duties that may be required from time to time for the general smooth running of the business.

Responsible self-starter, capable of handling multi-faceted tasks and of working under pressure.

Team player, who values teamwork, has good team building skills and is able to communicate effectively with all levels of employees.

Understands and respects local cultural, able to adapt to changing environment.

Requirements:

  • Bachelor’s degree in culinary science or relevant field.
  • A minimum of 2 years’ experience in a similar role.
  • Strong knowledge of cooking methods, kitchen equipment, and best practices.
  • Good understanding of MS Office and restaurant software programs.
  • Teamwork-oriented with outstanding leadership abilities.
